Caribbean flavors are a favorite of FB. All across the islands one can find vibrant flavors and lively spices abound. This one is no exception. Typical of many Flavor Bible recipes we grabbed what was handy and this jerk marinade did not disappoint.
Admittedly, we made some subs – white sugar and maple syrup in place of brown sugar, chives (picked from the herb garden) in place of scallions. In some cases we would have reproduced this recipe to a spec we deemed ideal but this turned out beyond expectations. However, this is the essence of quarantine meal prep… making the best of what you have!
So, crank up the reggae tunes and let’s do this thing!
Preparation: Easy Homemade Jerk Marinade
Fear not the length of the ingredient list in the recipe below. Many of these items are sitting in spice cabinets and refrigerators begging to be used. Dust off those old baking spices, pick up a few peppers at the store, and prepare to amaze your family and/or dinner guests.
The warmth of the allspice, cinnamon, and nutmeg combination combined with the citrus juices and the fruity kick of the habaneros make this a memorable flavor mix.
Simply portion out the ingredients according to the recipe below, jam them into a blender, and blend until smooth. There is very little prep needed as the machine will handle the business end of this transaction for you.

Easy Homemade Jerk Marinade
Equipment
- Food Processor or blender
Ingredients
- 3 Habanero Peppers Remove seeds if spice is a concern. Scotch bonnets can be subbed (they look and act similar).
- ½ Large Red Onion, chopped
- 6 Garlic Cloves
- 10 stalks Fresh Chives Can sub ½ amount of scallions
- ¼ cup Low Sodium Soy Sauce
- ¼ cup Apple Cider Vinegar
- 2 tbsp Extra Virgin Olive Oil
- ¾ cup Fresh Squeezed Orange Juice
- 2 tbsp Fresh Squeezed Lime Juice
- 1 tbsp Fresh Grated Ginger
- 2 tbsp Sugar
- 2 tsp Maple Syrup Can swap sugar and maple with 2 tbsp brown sugar
- 1 tsp Ground Nutmeg
- 1 tsp Ground Allspice
- 1 tsp Ground Cinnamon
- 1 tsp Fresh Thyme
- 1 tsp Sea Salt
- 2 tsp Fresh Ground Black Pepper
Instructions
- Combine all ingredients into a food processor or blender. Blend until smooth. Refrigerate or use immediately.
