Creamy, garlicky, with a hint of tang, a dash of spice, and rounded out with some dried herbs. Sounds good, doesn’t it? That’s exactly what this Sun Dried Tomato Aioli is and we think you will love it.
What is Aioli?
Traditional aioli is a Mediterranean sauce made of garlic, salt, and olive oil. The name means “garlic and oil”. It is found in the cuisines of the Mediterranean coasts of Spain, France, and Italy. However, some versions of the sauce are closer to a garlic mayonnaise, incorporating egg yolks and lemon juice, whereas other versions are without egg yolk and have more garlic. There are countless variations.
In the U.S. many varieties of flavored mayonnaise are referred to as aioli. While this may make purists cringe they share a lot of the same characteristics, particularly in France where egg is often used as an emulsifier. Before we get your head spinning any further, we’ll leave it at this – mayonnaise creates a shortcut and this condiment rocks.
Preparation: Sun Dried Tomato Aioli
The good news is this is very simple to make and uses a lot of common household ingredients. Simply grab the ingredients, add to a blender or food processor (affiliate link; we highly recommend the Ninja product!), and combine until smooth.
A quick note on the photo below. We ended up adding lemon juice, thyme, and oregano after our initial blend. It definitely made a difference so we either have to learn photoshop or make this Sun Dried Tomato Aioli again!
Try this as a spread on a sandwich (maybe a BLT, yum!), burger, or as a dip. We recommend it on our Red, White, and Blue Burgers!

- Food Processor or blender
Ingredients
- ½ cup Mayonnaise
- ¼ cup Sun Dried Tomatoes, drained of oil
- 1 clove Garlic, peeled
- ½ tsp Dried Oregano
- ½ tsp Dried Thyme
- 1 tsp Lemon Juice, fresh squeezed
- ½ tsp Stone Ground Mustard
- ¼ tsp Cayenne Pepper
- Salt, to taste
Instructions
- Combine all ingredients in a food processor or blender. Combine until smooth.
