Y’all want to have the easiest weeknight meal for the family? Are you tired of the same boring rotation of meals week in and week out? So many in the meat and potatoes crowd rarely look forward to dinner anymore because it’s just not exciting. If you’re in that boat, give these Cuban Mojo Pork Chops a try. Yes, salt, pepper, and a grill are nice – and really hard to go wrong if you cook a meaty pork chop correctly (i.e. don’t overcook it!) – but whipping up a quick marinade and letting it add some magic to the center of your plate is going to reinvigorate your passion for mealtime.

Preparation: Cuban Mojo Pork Chops
First you’ll want to make the marinade. We recommend doing this a day ahead of time. It will be worth the wait. Follow the link for that recipe.
After that, it’s simply deciding what you want to make for your sides (we are biased to our aforementioned suggestions) and firing up the grill. The grill time will depend largely on the thickness of your pork chops but if you have a moderately cut chop (say 1/2 to 3/4″ in thickness) a few minutes on each side will do the trick.
One thing you’ll always want to avoid with pork is overcooking it as it tends to dry out and become tough. However, since you made this wonderful marinade these pork chops will be slightly more forgiving than ones simply seasoned with salt and pepper.

Mojo Pork Chops
Ingredients
- 4 Bone-in Pork Chops

Instructions
- Marinate pork chops for at least an hour and up to 24 hours.
- Preheat grill to 400 – 450° and set burners to medium. Grill 4 – 5 minutes on each side (will depend on thickness) or until desired doneness (145°F internal temperature).
