Looking for the next big party hit to bring to your next gathering? If you’re a football fan maybe you’re already thinking about what to bring to the upcoming Big Game party? Well, look no further. This is the dip (or bean salad) that has many names: Black Eyed Pea Relish, Carolina Caviar, Cowboy Caviar, Georgia Caviar, Hillbilly Caviar, Redneck Caviar, or Texas Caviar – and we’re sure there are others. Clearly a lot of states want to lay claim. We’re going to go with Cowboy Caviar but we may have done just as well drawing names out of a hat.
This one is all prep and no cook – a simple amalgamation of beans and veggies mixed with some Italian dressing. It goes great on tortilla chips or even a cracker. We recommend making it ahead of time so the ingredients can hang out and assimilate for a bit. Here’s how we make it…
Preparation: Cowboy Caviar
We say this every time but for this one we can’t stress it enough, get all those ingredients out and handy out front. In this instance it’s less to make life easier as it is to ensure you don’t leave anything out. It has happened to the best of us.
After that, it’s basically a lot of chopping and mixing together. A couple of ingredient notes: we used hot Rotel and Zesty Italian dressing for some added punch and depth of flavor. Once assembled we recommend chilling for a chilling in an airtight container for at least a couple of hours as mentioned in the intro. Also, this is not some National Dish with no room for creativity. Feel free to make it your own!

Cowboy Caviar

- Mixing Bowl
Ingredients
- 1 can Black-Eyed Peas, drained and rinsed 14.5 oz. can
- 1 can Black Beans, drained and rinsed 15.25 oz. can
- ½ can Roasted Corn, drained and rinsed 14.75 oz. can
- 1 can Rotel, hot or mild We used hot
- ½ cup Zesty Italian Dressing We used Wishbone
- 1 Jalapeno Pepper, seeded and diced
- ½ Red Onion, diced Medium sized
- 3 Celery Stalks, diced
- 1 Green Bell Pepper, diced Medium sized
- 1 Cucumber, peeled, seeded, and diced Medium sized
- 1 clove Garlic, minced Large clove
- ¼-½ cup Cilantro, chopped To taste
- Salt and Pepper, to taste
Instructions
- Prep all ingredients and mix well. We recommend chilling in a tightly covered container for 2 – 4 hours (or make a day ahead).
