Pesto! OMG, who doesn’t love it? It works so well as a toss-in to pasta and even as a dip for artisan crackers. Today, we twist the traditional with this Beet Green Pesto.
What is pesto anyway?
It’s simple, really. Usually just a few ingredients: garlic, pine nuts, salt, basil, grated cheese and oil. If you are dying to know more then you can read the full detail here.
Original pesto recipes were made long before food processors. But, technology is our friend and what we are doing here is taking the conventional, altering it to a degree, and providing you an easy and effective way to use an often discarded ingredient in a manner that makes a delicious and nutritious alternative.
Beet Greens… What the?
So, you buy beets at the store with the intent of using them to their full potential. The beetroot itself has tons of applications (we love them here at FB). But, what does one do with the greens attached to this tasty, earthy root? Those easily discardable greens are not only nutritious but are flavorful little guys. I’ve been told they have more nutrients than the actual beet. You can sub them into salads or maybe try a new twist on an old favorite (ahem… the pesto we are about to make). The beauty of this recipe is that after a little prep we simply jam everything into a food processor.

Beet Green Pesto
Equipment
- Food Processor
Ingredients
- 2.5 cups Beet Greens, chopped Tops of 2 to 3 beets should be sufficient
- 2 tbsp Fresh Basil, chopped
- ¼ cup Extra Virgin Olive Oil
- ¼ cup Almonds or pine nuts Can use chopped, slivered, or raw
- 2 cloves Garlic, chopped
- ¼ cup Parmesan Cheese, grated
- 1 tbsp Lemon Juice
- Sea Salt and Black Pepper To taste
Instructions
- Add all ingredients to a food processor. Process until smooth or desired consistency. Can add oil if needed.
