1cupFrozen Sweet Corn
5oz.Tomato Paste1 small can
1can Diced Tomatoes, undrainedapprox. 14.5 oz.
¾cupWhite Rice
½cupLentilsWe used green but any color will be fine.
1Habenero Pepper(Optional, also optional to seed.. we did not)
1Poblano Pepper(Also optional to add and to seed, we added and did not seed)
½tsp.Herbs de Provence
½tsp.Slap Ya Mama Cajun SeasoningOr similar
½tsp.Ground Coriander
⅓tsp.Ground Paprika
⅓tsp.Ground Thyme
¼tsp.Fresh Ground Black Pepper
2cupsSuper GreensCan sub any green such as kale, spinach, etc.
1canCream of ChickenApprox. 10.5 oz.
3cups Water
⅓cupHalf & Half Or Heavy Cream
Instructions
Add oil and turn the pressure cooker to saute mode. Add onion and saute for 3 - 4 minutes. Add garlic and saute another minute, until garlic is fragrant.
Add soup mix, vegetable broth, sweet corn, tomato paste, diced tomatoes, rice, lentils, habanero, poblano, herbs de provence, "Slap Ya Mama", coriander, paprika, thyme, and black pepper. Close lid and place on "Soup Mode" or 30 minutes on high pressure.
Let natural release for 20 - 25 minutes or until pressure is gone.
Stir in greens, cream of chicken, cream (or half & half) and water. Cover on warm for 10 additional minutes.
