Bacon Mushroom Spinach

Ingredients
  

  • 3 - 4 slices Bacon
  • 1 Shallot, diced
  • 8 oz. Portabella Mushrooms, sliced
  • 4 - 5 cups Fresh Spinach
  • Salt and Pepper, to taste

Instructions
 

  • In a skillet, fry up the bacon until slightly crisp. Remove from pan and set aside.

  • Add shallot and mushrooms to bacon grease and saute for 8 - 10 minutes, stirring occasionally and until cooked down a fair amount.

  • Stir in spinach (it will seem like a lot raw but will cook down accordingly). Continue to stir until spinach wilts and cooks down with rest of ingredients, another 5 - 6 minutes.

  • Remove from heat and serve with favorite entree.
