In a skillet, fry up the bacon until slightly crisp. Remove from pan and set aside.
Add shallot and mushrooms to bacon grease and saute for 8 - 10 minutes, stirring occasionally and until cooked down a fair amount.
Stir in spinach (it will seem like a lot raw but will cook down accordingly). Continue to stir until spinach wilts and cooks down with rest of ingredients, another 5 - 6 minutes.
