If you’ve ever had a memorable gyro or one of many delectable Greek dishes you might recall a tasty, creamy, cucumber-y (yes, we made up a word) condiment that really stuck with you. That, my friends, was tzatziki =)
You may have even wondered aloud that what you were eating seemed simple enough; that the ingredients didn’t seem too complex. If only you could figure out what was in that sauce or dip, you too could be a hero in your home kitchen.
Well, look no further. We have made this tzatziki countless times and it never disappoints. The cool, creamy flavor tastes even better after it sits overnight in your refrigerator.
This is a very simple condiment to make with a few simple ingredients and a food processor. As always, grab your ingredients and let’s get this party started!
The most important step in this recipe is prepping the cucumber. Cucumbers are about 95% water and no one wants a watered down tzatziki. Grab a grater and grate the cucumber until you have a pile of shredded goodness.
The next part is the only real labor in this recipe but consider it a labor of love. This may seem primitive but we simply grab the pile of shredded cucumber, hold it over a colander for drainage, and squeeze the heck out of it. Then squeeze some more. Squeeze until you think no more water could possibly come from this little beast. Inevitably, your hand will get tired and the shreds will still be somewhat moist, but you’ve done it!
The next part is simple. Toss all of your ingredients into a food processor and pulse until smooth. Chill for at least a half hour (the longer the better as the flavors get together). Tzatziki
Equipment
- Food Processor
Ingredients
- 1 Cucumber, grated and squeezed Medium cucumber
- 2 tbsp Extra Virgin Olive Oil
- 1 cup Greek Yogurt
- 2 tbsp Fresh Dill
- 1 tbsp Lemon Juice
- 1 clove Garlic, chopped
- Sea Salt To taste
Instructions
- Grate the cucumber over a box grater. Once grated squeeze cucumber over the sink removing as much excess water as possible. Wrap in a paper towel absorbing additional moisture (this will keep tzatziki from being too watery).
- Add all ingredients to a food processor and blend until smooth. Chill for at least 30 minutes (even better overnight) and serve with your favorite Greek dish.
