Ingredients
  

  • 1 Cucumber, grated and squeezed Medium cucumber
  • 2 tbsp Extra Virgin Olive Oil
  • 1 cup Greek Yogurt
  • 2 tbsp Fresh Dill
  • 1 tbsp Lemon Juice
  • 1 clove Garlic, chopped
  • Sea Salt To taste

Instructions
 

  • Grate the cucumber over a box grater. Once grated squeeze cucumber over the sink removing as much excess water as possible. Wrap in a paper towel absorbing additional moisture (this will keep tzatziki from being too watery).
  • Add all ingredients to a food processor and blend until smooth. Chill for at least 30 minutes (even better overnight) and serve with your favorite Greek dish.
