Switch things up in the kitchen with this Easy Greek Marinade! This marinade takes just a few minutes to make and will add tons of flavor to chicken, veggies, lamb, you name it. Now, unlike some out there, we aren’t on an endless crusade against store bought sauces and marinades. There are some good ones out there that work in a pinch. But, with only a handful of ingredients and simple mixing we are huge advocates of this one.
The fresh herbs and oil combine with the vinegar and lemon juice to make a truly magical concoction. We’ve used it on our Grilled Marinated Greek Chicken and in our Grilled Greek Veggie Bowls to throw a monkey wrench into the ordinary. It’s kind of life changing, really. Ok, maybe not that extreme but let us know what you think!
Preparation: Easy Greek Marinade
Fresh ingredients will go a long way in helping this Greek Marinade reach its full potential. You can find fresh herbs at most local grocers – or you can always grow them in pots like we do. It’s very satisfying to be able to walk outside and grab the herbs you need. Besides, they are never out of stock =)
Full disclaimer: we did use dried oregano here so don’t feel too guilty if you have to pull something out of the spice cabinet, but the more fresh ingredients used the livelier the marinade – and the end food item – will be.
Preparation is simple: pull the herbs from their stems, mince up the garlic, squeeze the lemon, and mix all the ingredients in a bowl. Refrigerate or use as desired.
Our favorite application of this marinade is the Grilled Marinated Greek Chicken below. Make a side of homemade Tzatziki to use as a dip for warm pita bread or as a condiment to the chicken.

Easy Greek Marinade
Ingredients
- ¼ cup Extra Virgin Olive Oil
- 1 tsp Fresh Thyme
- 1 tsp Fresh Rosemary
- 1 tsp Dried Oregano
- 2 cloves Garlic, minced
- 1 tbsp Red Wine Vinegar
- 1½ Lemons, juiced
- 1 pinch Cayenne Pepper, Sea Salt, Black Pepper To Taste
Instructions
- Mix all ingredients together in a bowl. Refrigerate or use immediately to marinate your favorite meat or vegetable combination.
