There are so many things to discuss with this recipe. So many of you must be wondering about the name. How can that be appealing?! Hang around for a moment and we will fill you in. Affectionately named Trash Can Chowder (with a more food-friendly name of Lentil Corn Chowder) is about to take over your life.
So, our first inclination was to call this as you see it, “Trash Can Chowder”.
Well, Flavor Bible, that is just a horrible recipe name. Why would you ever call a recipe such a despicable name… I do declare (in our most Southern of accents, and we mean that kindly as we love those =))”
You know what? You’re right! Hence the parenthetical title of Lentil Corn Chowder. The truth is we had no intention with this random Instant Pot creation – hence what you will soon realize is a lack of prep photos which is atypical for a FB recipe post (of note, however, this was so good we intend to fix that down that road but we wanted to get this to you first!). In fact, the parenthetical name is just a place holder. If y’all make this and have a better title please do tell. We tried to call out what we thought might grab attention… full disclosure.
Many of you encounter moments where you wonder aloud, “How can I use up both the ingredients in my fridge that are bound to go bad whilst also taking out some of those pantry items that have been staring me down for months”
See… this is what we do for y’all. Let us make one thing clear… you do not need to duplicate this recipe line for line unless you really want to. We are on the fence here. This recipe is excellent – hence the post – yet we created this as a “trash can recipe” which means we were using up a bunch of “stuff” and weren’t actually gunning for content on this occasion… yet we somehow stumbled upon something we felt compelled to share.
Preparation: Trash Can Chowder (Lentil Corn Chowder)
Alright, so let’s talk this out. Normally, we have a little bit of prep…. some may consider it excessive. Regardless, this one is very low prep, very low skill… all of y’all can do this. Trust us and get in the game here. Here we go:
Add oil and turn the pressure cooker to saute mode. Drop in the onion and saute for 3 – 4 minutes. Add garlic and saute another minute, until garlic is fragrant.
Add soup mix, vegetable broth, sweet corn, tomato paste, diced tomatoes, rice, lentils, habanero, poblano, herbs de provence, “Slap Ya Mama”, coriander, paprika, thyme, and black pepper. Close lid and place on “Soup Mode” or 30 minutes on high pressure.
Let natural release for 20 – 25 minutes or until pressure is gone.
Stir in greens, cream of chicken, cream (or half & half) and water. Cover on warm for 10 additional minutes. Stir and serve. This may be our most accidental amazing recipe yet! Let this be a lesson in finding ways to use up random ingredients in your fridge and pantry. Our expectations were so low we had no intention of posting this but it turned out so good we had to share. We will follow up down the road with prep and step-by-step shots like we have in our other posts.

Equipment
- Pressure Cooker or Instant Pot (8 qt.)
Ingredients
- 2 tbsp. Extra Virgin Olive Oil
- 1 Sweet Onion, diced
- 2 cloves Garlic, minced
- 1 pkg. Kroger Vegetable Soup Mix Or like item (see photos in copy)
- 4 cups Vegetable Broth
- 1 cup Frozen Sweet Corn
- 5 oz. Tomato Paste 1 small can
- 1 can Diced Tomatoes, undrained approx. 14.5 oz.
- ¾ cup White Rice
- ½ cup Lentils We used green but any color will be fine.
- 1 Habenero Pepper (Optional, also optional to seed.. we did not)
- 1 Poblano Pepper (Also optional to add and to seed, we added and did not seed)
- ½ tsp. Herbs de Provence
- ½ tsp. Slap Ya Mama Cajun Seasoning Or similar
- ½ tsp. Ground Coriander
- ⅓ tsp. Ground Paprika
- ⅓ tsp. Ground Thyme
- ¼ tsp. Fresh Ground Black Pepper
- 2 cups Super Greens Can sub any green such as kale, spinach, etc.
- 1 can Cream of Chicken Approx. 10.5 oz.
- 3 cups Water
- ⅓ cup Half & Half Or Heavy Cream
Instructions
- Add oil and turn the pressure cooker to saute mode. Add onion and saute for 3 – 4 minutes. Add garlic and saute another minute, until garlic is fragrant.
- Add soup mix, vegetable broth, sweet corn, tomato paste, diced tomatoes, rice, lentils, habanero, poblano, herbs de provence, "Slap Ya Mama", coriander, paprika, thyme, and black pepper. Close lid and place on "Soup Mode" or 30 minutes on high pressure.
