We try to do it all around here – from simple to complex. Even the complex we attempt to simplify. We get it… busy lives all around but some of us still want a solid meal at supper time. This is why you insert Flavor Bible to fill that gap. We got you. If you have an Instant Pot or similar pressure cooker you are in for a very simple but tasty treat. Many of us buy rotisserie chickens for their endless applications – shredded chicken for salads, general chicken goodness for a hearty meat and potatoes meal, omelet add-ins, tacos, the list is literally unending. Well, add this to the list. This Easy Rotisserie Chicken Tikka Masala falls on the easiest end of the spectrum but will provide a step up to lame weeknight meals.
Preparation: Easy Rotisserie Chicken Tikka Masala
Traditional Indian dishes can have extensive ingredient lists and appear daunting to prepare, much less get right. We have some of those on the site but on this day we are providing you convenience. This is a 30 minute meal and is perfect for the weekday rotation.
As always, prep on the front end and make your life easier during the actual cooking process.
Add the oil and the butter to the Instant Pot and turn to Saute mode. Then add the onions and peppers. Saute until the vegetables begin to soften, stirring occasionally, 3 – 4 minutes. Add the garlic and cook for another 1 – 2 minutes, stirring and until fragrant.
Add the beef broth and deglaze the pan, scraping any bits stuck to the bottom. Turn off saute mode. Add the remaining ingredients to the Instant Pot insert and stir to mix. Cook on high pressure for 10 minutes.
While Instant Pot is coming to pressure, cook the rice according to the package directions.
Quick release the pressure on the Instant Pot. Stir ingredients. Pull rice off the burner once completed and fluff.
Plate with a base of rice and top with tikka masala mixture. Garnish with fresh cilantro or diced mint (if desired).
BOOM! The easiest thing that you accomplished all week… and probably the tastiest. Cheers!

Ingredients
- 2 tbsp Unsalted Butter
- 1 tbsp Extra Virgin Olive Oil
- 1 Yellow Onion, thinly sliced
- 1 large Red Bell Pepper, thinly sliced
- ½ cup Beef Broth
- 2 cloves Garlic, minced
- 24 oz. Rotisserie Chicken Meat, pulled give or take, not an exact science
- 2 cups Tikka Masala Simmering Sauce
- 1¾ cups Fire Roasted Tomatoes, diced
- 1½ cups Green Peas, frozen
- 1 cup Jasmine Rice
- ¼ cup Fresh mint or cilantro, chopped If desired
Instructions
