Because adding bacon, mushrooms or the combination of the two makes anything more delicious! Folks, we aren’t starting a revolution here. This is another one of your easy Flavor Bible go-tos that takes something ordinary (spinach) and makes it extraordinary… or just better than it otherwise would be 😀 No lengthy monologue needed. No history of the dish and exploration of its origins. No complex twists or turns for the sake of stroking our culinary ego. This is Bacon Mushroom Spinach. You’re welcome.
Preparation: Bacon Mushroom Spinach
Grab the very limited ingredient assortment and let’s get to (quick) work.

First we’ll work with the bacon. It will set the stage by flavoring the pan and will eventually be added back in. In a skillet, fry up the bacon until slightly crisp. Remove from pan and set aside.

Add the shallot and mushrooms to bacon grease and saute for 8 – 10 minutes, stirring occasionally and until cooked down a fair amount.

Stir in the spinach (it will seem like a lot raw but will cook down accordingly). Continue to stir until spinach wilts and cooks down with rest of ingredients, another 5 – 6 minutes.

Remove from heat and serve with favorite entree. It’s that simple. You’ll never look at spinach the same… or pass it up when you see that markdown sticker on the package at the grocery store. Spinach is versatile, we toss it in many of our soups to add color, texture, and flavor. It’s far more than just a salad base or side item.

- 3 – 4 slices Bacon
- 1 Shallot, diced
- 8 oz. Portabella Mushrooms, sliced
- 4 – 5 cups Fresh Spinach
