Every once in a while an ingredient quietly sits in the refrigerator for months without much attention before suddenly becoming the star of dinner. This creamy balsamic chicken recipe started with a jar of oil-packed sun-dried tomatoes that had been quietly sitting in the refrigerator for months without much attention.
Most of us have probably chopped a few into a pasta salad or tossed them on a pizza, but they deserve a much larger role. The tomatoes themselves bring concentrated sweetness and acidity while the seasoned oil becomes an ingredient all on its own.
With a couple of balsamic-marinated chicken breasts already waiting in the refrigerator, dinner quickly took shape. Mushrooms, a banana shallot, parmesan, lemon, and a splash of half-and-half rounded out the supporting cast and transformed a simple skillet dinner into something that felt much more substantial.
The best part? There’s a good chance you already have most of these ingredients sitting in your pantry or refrigerator.
Let’s get to it.

Preparation: Creamy Balsamic Chicken with Mushrooms and Sun-Dried Tomatoes
The ingredient list is relatively straightforward, but there are a couple of places where quality makes a difference.
Oil-packed sun-dried tomatoes are worth seeking out for this recipe. You’ll use both the tomatoes and a little of the seasoned oil to build the sauce.
Freshly grated Parmigiano-Reggiano is another ingredient that rewards the extra effort. It melts beautifully into the sauce and provides a subtle nuttiness that pre-shredded cheese simply can’t match.
Finally, don’t skip the lemon. A little juice and fresh zest at the end brighten the entire dish and keep the cream sauce from becoming overly rich.

A good skillet sauce starts long before any cream reaches the pan.
Take the time to develop a deep golden crust on the chicken and resist the urge to move it around. The caramelized bits left behind become the foundation for everything that follows.
Once the chicken is cooked through, transfer it to a plate and let it rest while the sauce comes together.

Mushrooms have an incredible ability to absorb flavor, making them the perfect partner for the balsamic fond left behind in the skillet.
Allow them to brown before adding the shallots and garlic, then stir in the chopped sun-dried tomatoes. At this point the kitchen should smell pretty incredible.

Half-and-half creates a silky sauce without becoming overly heavy, while parmesan provides body and richness.
Dried basil and thyme reinforce the earthy flavors from the mushrooms, and a finishing squeeze of lemon ties everything together. Thin slices of Fresno pepper aren’t required, but they add a welcome pop of color and just enough heat to balance the richness.

This is one of those recipes that manages to feel both comforting and fresh at the same time.
Serve it over pasta if you prefer, but toasted sourdough turned out to be the perfect companion. The crusty bread soaks up every bit of the mushroom cream sauce while letting the chicken remain the star of the plate.
As with many of our favorite recipes, the real lesson here isn’t following every ingredient exactly as written. It’s remembering to open the pantry, rediscover something you’ve forgotten about, and see where it leads.
Until next time, keep exploring new flavors and never underestimate the power of a well-stocked refrigerator.

The two main kitchen tools we used for this recipe were our All-Clad sauté pan and a quality chef’s knife. A good stainless steel pan is hard to beat when building a skillet sauce like this one, allowing you to develop the fond that ultimately becomes the foundation of the dish. A sharp knife also makes quick work of the mushrooms, shallot, sun-dried tomatoes, and garnishes.
These are two kitchen workhorses that find their way into countless recipes and are well worth the investment if you spend a lot of time cooking at home (affiliate links):

Notes
Don’t rush the mushrooms. Allow them to release their moisture and brown before adding the remaining ingredients. That’s where much of the depth of flavor develops.
Oil-packed sun-dried tomatoes are worth seeking out. Their flavored oil adds another layer of richness and helps build the sauce.
No sourdough? Serve over mashed potatoes, buttered egg noodles, or rice. While pasta works, crusty bread lets the mushroom cream sauce remain the star.
Leftovers reheat beautifully over low heat with a splash of half-and-half or milk. Estimated calorie count is chicken and sauce only and does not include the bread.
