Egg in a Hole Avocado Toast

Ingredients
  

  • 2 tbsp Butter, unsalted
  • 2 slices Bread Chef's choice on style
  • 2 Eggs
  • 1 Avocado, diced
  • 1 Tomato, diced
  • ½ tsp Crushed Red Pepper
  • Salt and Pepper, to taste

Instructions
 

  • Cut circular holes in the bread by hand or using an item such as a cookie cutter or top of a drinking glass.
  • Melt half the butter in a skillet over medium heat.
  • Place the bread and the cutouts in the pan. After about 1 - 2 minutes crack an egg in each hole. Season with salt, black pepper and crushed red pepper to taste.

  • After another 1 - 2 minutes add in the other half of the butter and flip all contents in the pan. Season the new top side of the egg. Cook another 1 - 2 minutes or until the egg is to your desired temperature/firmness.
  • Remove to a plate, top with avocado and tomato. Add a pinch of salt and pepper to taste. Serve immediately.
