Coconut Lime Cilantro Brown Rice

Ingredients
  

  • 1 cup Brown Rice
  • 1 can Coconut Milk, light or full fat 13.5 oz.
  • 6.5 oz. Chicken Stock We used a tsp of Better than Bouillon chicken base with water
  • ½ Lime, juiced and zested
  • ¼ cup Cilantro, stems removed

Instructions
 

  • Add liquid ingredients and about half the cilantro to sauce pan and bring to a boil. Stir in the rice. Cover and simmer for 45 minutes (refer to package instructions as some rice varieties can vary) or until liquid is absorbed.
  • Fluff with a fork and top with remaining cilantro. Serve as a side to your favorite dish.

Our liquid to rice ratio was 2.5 to 1, per the package instructions.
