Many people find brown rice downright boring. Count us in that group. Sure, it’s healthier than your run-of-the-mill white rice but without some help the texture seems to throw us off and it never seems to take on flavor as well as its white rice counterparts. Never fear, we have come to the rescue with this Coconut Lime Cilantro Brown Rice that pairs well with both Caribbean flavors and some South Asian staples.
It’s amazing what a little stock, coconut milk, lime, and cilantro can do when you put them on the same team. This will be very simple, we promise. Grab the ingredients and we’ll have delicious rice in no time.
Note #1: We used Better than Bouillon to make our chicken stock, feel free to use canned stock if you prefer – simply a preference.
Preparation: Coconut Lime Cilantro Brown Rice
Add the liquid ingredients, lime zest, and about half the cilantro to a sauce pan and bring to a boil. Stir in the rice. Cover and simmer for 45 minutes (refer to package instructions as some rice varieties can vary) or until liquid is absorbed.
Note #2: Brown rice has a higher liquid to rice ratio than standard long grain white rice (and many other varieties). We used 2.5:1 per the package instructions.
After 45 minutes the liquid should be absorbed and the rice should no longer be hard or crunchy. Simply fluff with a fork and top with the remaining cilantro. You can also add extra lime zest if you so choose. Serve as a side to your favorite dish. This rice will go wonderfully with our Grilled Baja Fajitas, Thai Coconut Red Curry Chicken, or Curry Sausage Masala.

Coconut Lime Cilantro Brown Rice
Ingredients
- 1 cup Brown Rice
- 1 can Coconut Milk, light or full fat 13.5 oz.
- 6.5 oz. Chicken Stock We used a tsp of Better than Bouillon chicken base with water
- ½ Lime, juiced and zested
- ¼ cup Cilantro, stems removed
Instructions
