Ingredients
  

  • 1 can Black-Eyed Peas, drained and rinsed 14.5 oz. can
  • 1 can Black Beans, drained and rinsed 15.25 oz. can
  • ½ can Roasted Corn, drained and rinsed 14.75 oz. can
  • 1 can Rotel, hot or mild We used hot
  • ½ cup Zesty Italian Dressing We used Wishbone
  • 1 Jalapeno Pepper, seeded and diced
  • ½ Red Onion, diced Medium sized
  • 3 Celery Stalks, diced
  • 1 Green Bell Pepper, diced Medium sized
  • 1 Cucumber, peeled, seeded, and diced Medium sized
  • 1 clove Garlic, minced Large clove
  • ¼-½ cup Cilantro, chopped To taste
  • Salt and Pepper, to taste

Instructions
 

  • Prep all ingredients and mix well. We recommend chilling in a tightly covered container for 2 - 4 hours (or make a day ahead).
