"Cheater" Black Beans

Quick recipe to doctor up canned black beans. Great for weeknight meals.

Ingredients
  

  • 2 tsp Extra Virgin Olive Oil
  • 15 oz. Can of Black Beans, undrained
  • Sweet Onion, diced
  • 1 Jalapeno, diced
  • 2 cloves Garlic, minced
  • 1 tbsp Cilantro, chopped
  • ½ tsp Cumin
  • Additional Cilantro and Diced Raw Onion For Garnish

Instructions
 

  • Heat oil in a sauce pan. Saute veggies on medium heat for 2 - 3 minutes. Add garlic and saute for another couple of minutes until onions and jalapeno are softened.
  • Add can of beans with liquid along with remaining ingredients. Simmer for 10 - 15 minutes on low until liquid is reduced by at least half or desired consistency. Serve with your favorite dish and, if desired, top with a small amount of raw diced onion and fresh cilantro.
