Equipment

  • Food Processor or blender

Ingredients

  • 3 Habanero Peppers Remove seeds if spice is a concern. Scotch bonnets can be subbed (they look and act similar).
  • ½ Large Red Onion, chopped
  • 6 Garlic Cloves
  • 10 stalks Fresh Chives Can sub ½ amount of scallions
  • ¼ cup Low Sodium Soy Sauce
  • ¼ cup Apple Cider Vinegar
  • 2 tbsp Extra Virgin Olive Oil
  • ¾ cup Fresh Squeezed Orange Juice
  • 2 tbsp Fresh Squeezed Lime Juice
  • 1 tbsp Fresh Grated Ginger
  • 2 tbsp Sugar
  • 2 tsp Maple Syrup Can swap sugar and maple with 2 tbsp brown sugar
  • 1 tsp Ground Nutmeg
  • 1 tsp Ground Allspice
  • 1 tsp Ground Cinnamon
  • 1 tsp Fresh Thyme
  • 1 tsp Sea Salt
  • 2 tsp Fresh Ground Black Pepper

Instructions

  • Combine all ingredients into a food processor or blender. Blend until smooth. Refrigerate or use immediately.

Notes

Scallions and brown sugar are preferred (see notes next to chives and maple syrup).  We found these subs still created a wonderful marinade based on ingredients on hand.  The spice from the habaneros (or scotch bonnets) combines with the warmth of the baking spices and the acidity/fruitiness of the juices to make a powerful, delectable flavor combination.
