6ozBacon Ends and PiecesOr simply chop regular bacon into chunks
1largeDough BallFrom local pizza place or store bought
Flour, for dusting
1tbspExtra Virgin Olive Oil
¾cupHomemade Pizza SauceSee link in post.
1cupMozzarella Cheese, shredded
¼cupPepper Jack Cheese, shredded
3Large Eggs
3Green Onions, sliced
Crushed Red Pepper and Parmesan Cheese, to tasteFor topping finished pizza, if desired
Instructions
Form the sausage into balls. Brown in a skillet. Remove and set aside on a paper towel lined plate.
In the same pan, cook the bacon to desired doneness. Remove, set aside on another paper towel lined plate.
On a large cutting board or other clean flat surface scatter some flour. Take a room temperature dough ball and stretch it to the size of the pizza pan or other desired shape/size. Brush pan or grill with oil, use excess oil to coat bottom of dough.
Preheat the grill to 500°F. Place stretched dough directly on grill or on pan to place on the grill. Cook for approximately 3 minutes. Remove from grill and flip the dough.
Working quickly, spread the sauce over the dough. Then add cheese, sausage, bacon, and half of green onion leaving a gap for the eggs. Return pizza to the grill for 3 - 4 minutes.
Open grill, crack the eggs in the open spots, close lid and cook for another 3 - 5 minutes (depends on desired egg doneness). Remove from grill and let cool for several minutes. Top with remaining green onion and any desired crushed red pepper and parmesan.
