Ingredients
  

  • 2 Boneless Skinless Chicken Breasts
  • ¼ cup Extra Virgin Olive Oil
  • 1 tsp Herbs: Fresh Thyme, Rosemary, Dried Oregano
  • 2 cloves Garlic, minced
  • 1 pinch Cayenne Pepper, Salt, Black Pepper To taste
  • 1 tbsp Red Wine Vinegar
  • Lemons, juiced

Instructions
 

  • Prepare the marinade: Add olive oil, vinegar, lemon juice, herbs, and spices to a prep bowl and mix together. Place chicken in a bag or container to marinate overnight (or at least an hour).
  • Preheat grill to about 400 degrees (give or take). Grill chicken for 5 minutes on each side.
  • Serve over quinoa or rice. Pairs well with zucchini or other vegetable.
