Prepare the marinade: Add olive oil, vinegar, lemon juice, herbs, and spices to a prep bowl and mix together. Place chicken in a bag or container to marinate overnight (or at least an hour).
Preheat grill to about 400 degrees (give or take). Grill chicken for 5 minutes on each side.
Serve over quinoa or rice. Pairs well with zucchini or other vegetable.
