Sausage, Mushroom, and Pepper Frittata

- 2 tbsp. Extra Virgin Olive Oil
- ½ Yellow Bell Pepper, roughly diced
- ½ Orange Bell Pepper, roughly diced
- ½ Sweet Onion, diced Large
- 3 cloves Garlic, diced
- 1 lb. Country Sausage, ground
- 10 - 12 Large Eggs
- ½ cup Milk
- 2 tbsp. Fresh Tarragon, chopped or torn
- Salt and Pepper, to taste
Preheat oven to 400°F. Meanwhile, saute peppers, onions, and mushrooms for 10 - 12 minutes or until softening and stirring occasionally.
Add ground sausage in bits, stirring in and breaking up large chucks with the side of a spoon. Continue cooking 4 - 5 minutes or until sausage is browned.
In the meantime, whisk 10 - 12 eggs with fresh tarragon, salt, pepper, and milk.
Remove Dutch oven from heat. Pour in egg mixture. Place uncovered in oven for 20 minutes (longer if needed, until eggs are set).
Remove frittata from the oven. Let cool 5 - 10 minutes. Portion into servings. Serve or portion for later and refrigerate.
