Ingredients
  

  • 2 tbsp Extra Virgin Olive Oil
  • 1 Sweet Onion, diced
  • 3 Celery Stalks, diced
  • 2 Carrots, Diced
  • 2 cloves Garlic, diced
  • 8 cups Chicken Stock
  • 1 lb. Split Peas
  • 1 Ham Bone From a spiral ham or just use diced ham
  • 2 - 3 Bay Leaves
  • ½ tsp. Dried Thyme
  • 1 pinch Cayenne Pepper (optional)
  • Salt and Pepper, to taste

Equipment

  • Instant Pot or other pressure cooker

Method
 

  1. Prep ingredients according to instructions. Place Instant Pot in saute mode with oil. Saute onion, celery, and carrot mixture (mirepoix) for 5 - 7 minutes or until beginning to soften and stirring occasionally. Stir in garlic and cook for another 1 - 2 minutes.

  2. Exit saute mode. Add remaining ingredients.
