Supreme Pizza Chili

All the flavors you would get from a Supreme Pizza - but in a soup!

Equipment

  • Instant Pot or Crock Pot Slow cooker or slow cooker function was used

Ingredients
  

  • 1 lb. Ground Hot Italian Sausage
  • 2 Carrots, diced
  • 2 Celery Stalks, diced
  • 1 Yellow Onion, diced
  • 1 cup Chopped Poblano Pepper
  • 1 Orange Bell Pepper, diced
  • 2 cloves Garlic, diced
  • 1 can Black Beans, drained 15 oz. can
  • 1 can Great Northern Beans, drained 15 oz. can
  • 1 can Mixed Chili Beans (kidney and pinto) 15.5 oz. can
  • 1 can Fire Roasted Diced Tomatoes and Green Chilis, undrained Rotel, 10 oz. can.
  • ½ lb. Ham, chopped We used frozen leftover holiday ham
  • 8 - 10 cups Chicken Stock

Instructions
 

  • Turn the Instant Pot to saute mode and brown the sausage, approximately 5 - 7 minutes, breaking up with a wooden spoon as it cooks. Drain excess grease (reserving some for vegetables) and set aside. Deglaze pan with some stock if needed.

  • Saute the carrots, celery, onion, and both peppers for 8 - 10 minutes, stirring occasionally and until beginning to soften. Stir in garlic and cook for another 2 minutes or so, until fragrant.

  • Add remaining ingredients along with adding the sausage back to the pot. Place on slow cooker setting for 4 hours.

Notes

Drained black beans and Great Northern Beans only.  Retained liquid from other cans.
