Kale was all the rage just a few short years ago. It began showing up in everything from smoothies to soups, casseroles, wraps, salads, and more. It certainly has versatility as it can be eaten raw or cooked with just about any approach. Kale seems to be one of those polarizing superfoods that many folks just love or hate. You’ll find it in some our soups: Black-Eyed Pea Soup and Ham and White Bean Soup to name a couple. But, today we let kale serve as more than just a sidekick. It gets to be the star. Kale Chips are super simple to make and roasting it will help to mellow the flavor for an inviting, crispy, highly nutritious snack or side item.
Preparation: Kale Chips
There isn’t a lot of fancy prep work or a laundry list of ingredients here. Once you make these you’ll be making them over and over. We think you can even get the kids to snack on them 😉
Preheat the oven to 300°F. Place pieces of kale in a mixing bowl and toss with olive oil and spices. Place in a single layer on a cookie sheet lined with foil lightly coated with cooking spray (or parchment paper).
Bake kale for 10 minutes, flip and place back in oven for another 5 – 7 minutes or until becoming crisp. Remove and serve immediately. Add in a lemon tahini dressing (post coming soon) for a perfect dipping sauce.

- 1 bunch Kale, ribs removed, cut to approx. 1" pieces
- 2 tbsp Extra Virgin Olive Oil
- ½ tsp Sea Salt
- ½ tsp Fresh Ground Black Pepper
- ¼ tsp Cayenne Pepper Optional
