Every year it seems like the world spins a little faster and 2023 is no different. It’s like we all play a game to see how many things we can juggle between work, family, and extracurricular activities. So many families are always “on the go” that dinner becomes stressful just to even think about. Well, we’re here to save the day with something very simple with little effort needed – Instant Pot Pulled Pork Tacos for the win.
We used a pork tenderloin in this one but you could easily – and maybe preferably – use a pork butt. You’ll find on this site that we use what we have on hand and if it turns out really well then we share it with you. We’re nice like that.
There are two main ingredients in this – the aforementioned pork tenderloin and a jar of Trader Joe’s Salsa de Cacahuate. Of course you’ll need tortillas of your choice and then you can mix and match from the ingredients we list in the recipe card to build these delightful Instant Pot Pulled Pork Tacos. And, since this recipe is aimed at the busy folks out there a side of our “Cheater” Black Beans will compliment this well. So, prepare yourself for one of the easiest dinners you’ll ever make.
Preparation: Instant Pot Pulled Pork Tacos
Place the meat in the pot or slow cooker. Pour the jar of Trader Joe’s Salsa de Cacahuate or alternate sauce over the top of the meat. Then, simply place on slow cook setting for 7 – 8 hours (or cook on low in a traditional slow cooker for same amount of time). It’s that easy.
Tip: You can sub the protein and/or the salsa to come up with something unique on your own. The process will still be the same!
When the cook cycle is complete, use two forks to pull apart the meat and shred (you may want to allow the meat to rest and cool for a few minutes with the lid removed).
Now, all you have to do is build your tacos to your liking. Remember, this isn’t Taco Bell. Be creative. We recommend these quick Pickled Red Onions along with the other toppings below to create a true masterpiece. You can also cut the carbs out by using lettuce cups instead of tortillas 😉 The world is your oyster… or taco 😀

- Instant Pot or Crock Pot Or any device with slow cooking functionality
Ingredients
Ingredients in Pot
- 1 Pork Tenderloin, whole, 1 – 2 lbs. Could use a butt or other cut of pork
- 1 jar Trader Joe's Salsa de Cacahuate 12 oz. See recipe notes and blog copy. Can use alternates.
Ingredients to Build the Tacos
- Tortillas Corn or Flour. Any size from street taco to burrito. We used a fajita size for this one. A true street taco will be smaller and corn.
- Raw Sweet Onion, diced
- Cilantro
- Serrano Pepper, thinly sliced
- Pickled Red Onions
- Lime Wedges
- Queso Fresco, crumbled Optional
Instructions
- Place the meat in the pot or slow cooker. Pour salsa or alternate sauce over the top of the meat. Place on slow cook setting for 7 – 8 hours (or cook on low in a traditional slow cooker for same amount of time).
- When cook cycle is complete, use two forks to pull apart the meat and shred (may want to allow to rest and cool for a few minutes with lid removed).
- Build tacos to taste and enjoy!
