Do you ever just have those nights where you start screwing around in the kitchen contemplating what to make – either that evening or prepping for the week – and it just hits you? You know – the flavor, the craving, the something different you kept telling yourself you wanted to break up the monotony of dinner time? Yeah, us too. And, folks, that’s how this Grilled Marinated Greek Chicken came about.
It was like an ephiphany; the “ah, ha!”, “Eureka” moment in the endless quest for flavor that defines us. We had some chicken breasts that needed to be used up (it seems a great many of our recipes originate from ingredients needing an application before their shelf-life comes to an end). Some invisible force sent us to Greece on this particular mission. After all, we are globetrotters in this culinary journey we call life.

Well, you’ll find much of that in the marinade that pushes the flavor of this Grilled Marinated Greek Chicken into overdrive. We wanted to quote that just so you know we weren’t BS’ing you!

Preparation
If you’re new at making your own marinades, do not be intimidated. It can be tempting to walk through the grocery aisle and grab a bottle of jarred marinade off the shelf. Just don’t!
Ha ha… well there may be a time or two we make an exception (we’ll see), but not today. Today we make an incredible marinade that will make you rethink every other time you grabbed one of those said marinades.
In our opinion, marinating this for 24 hours will bring out the most flavor. However, we understand many folks do not have the time or desire to marinate an item a day ahead whilst still providing dinner that same evening for the family. Give this at least an hour and you won’t be sorry.
Mix up the ingredients according to the recipe below and let Father Time be your ally. Preheat your grill and let it hang around the 400 degree level. Grill the breasts for about 5 minutes on each side, making sure the chicken reaches an internal temperature of 165 degrees Farenheit. Use a meat thermometer if you aren’t comfortable. Larger, thicker chicken breasts may require an extra couple of minutes per side.
We served this over some tri-color quinoa (admittedly, not Greek) with a side of grilled zucchini and a small helping of our homemade tzatziki. You can easily pair it an endless number of ways. Hell, sprinkle it with a little feta at the end if you want. You may find your loved ones nicknaming you Zeus after they’ve had your new favorite Greek dish. You deserve it. Opa!

Grilled Marinated Greek Chicken
Ingredients
- 2 Boneless Skinless Chicken Breasts
- ¼ cup Extra Virgin Olive Oil
- 1 tsp Herbs: Fresh Thyme, Rosemary, Dried Oregano
- 2 cloves Garlic, minced
- 1 pinch Cayenne Pepper, Salt, Black Pepper To taste
- 1 tbsp Red Wine Vinegar
- 1½ Lemons, juiced
Instructions
- Prepare the marinade: Add olive oil, vinegar, lemon juice, herbs, and spices to a prep bowl and mix together. Place chicken in a bag or container to marinate overnight (or at least an hour).
- Preheat grill to about 400 degrees (give or take). Grill chicken for 5 minutes on each side.
- Serve over quinoa or rice. Pairs well with zucchini or other vegetable.
