Ingredients
  

  • 1 lb. Lamb Chops, approx. ¾" thick
  • Lemon Zest, from 1 lemon
  • Salt and Pepper Use liberal amount to season, about 2 or 3 to 1 ratio of salt to pepper
  • ¼ cup Olive Oil
  • 3 cloves Garlic, smashed and roughly chopped
  • 1 Shallot, roughly chopped
  • ½ tbsp. Flat Leaf Parsley, chopped
  • ½ tbsp. Rosemary, chopped

Instructions
 

  • Mix all ingredients and toss with lamb chops. Marinate for at least one hour.

  • Grill over medium heat to medium rare (or desired doneness), about 4 minutes on 1 side and 3 minutes on the other. Let rest 5 minutes before serving with preferred side. See notes.
