Moroccan Couscous

Ingredients
  

  • 1 cup Pearled Couscous
  • ½ Onion, sliced thin
  • ½ Red Bell Pepper, sliced thin
  • 2 tbsp Extra Virgin Olive Oil
  • 2 tbsp Fresh Cilantro, minced
  • cups Chicken Broth
  • ½ cup Golden Raisins
  • ½ tsp Cumin

Method
 

  1. In a saucepan bring chicken broth to a light boil. Stir in couscous. Reduce heat to low and simmer according to package directions, typically 7 - 10 minutes.
  2. While the couscous is simmering, in a saute pan heat oil on medium heat for 2 - 3 minutes. Add onion and red pepper slices. Saute until onions and peppers are softened.
  3. Stir in cumin and raisins and continue to saute until onions are translucent.
  4. Stir cilantro into couscous along with contents of saute pan.
  5. Serve as a side to your favorite Moroccan, North African, or Middle Eastern dish. Pairs well with our Cornish Hen with a Moroccan Twist recipe.
