Moroccan Couscous
Jump to RecipeMoroccan couscous is one of our favorite little guilty pleasures. Couscous itself is actually a mini pasta that can easily be doctored up a number of ways. This may not be for the overly carb-conscious but we think it’s ok to indulge for the love of food. For this tasty little side we added some red bell pepper, onion, and golden raisins. It takes 15 minutes to make and is oh so easy.
Our Moroccan couscous pairs incredibly well with our Cornish Hen with a Moroccan Twist. We made the two together so you will see all those ingredients pictured below. We will focus the instructions and recipe card in this post to the couscous. Check out the link for the main dish above.
To get started, grab half an onion and red bell pepper and slice them thin. Chop up some cilantro and gather up a 1/2 cup of golden raisins.
In a sauce pan, bring about 12 oz. of chicken broth to a light boil . Add the couscous and simmer for about 8 minutes (this can vary slightly so refer to the package instructions on the couscous, typical ratio is 1.5:1 liquid to couscous and 7 – 10 minutes on the simmer).
In a separate pan, saute red peppers and onions until they begin to soften.
Stir in cumin and raisins and continue to saute until onions are translucent.
Stir the cilantro into the couscous along with the contents of the saute pan.
Serve as a side to your favorite Moroccan, North African, or Middle Eastern dish. Again, this pairs perfectly with our Cornish Hen with a Moroccan Twist or Moroccan Short Ribs.
Bringing these two recipes together will quickly make you the hero of your house, if you’re into that sort of thing.

Moroccan Couscous
Ingredients
- 1 cup Pearled Couscous
- ½ Onion, sliced thin
- ½ Red Bell Pepper, sliced thin
- 2 tbsp Extra Virgin Olive Oil
- 2 tbsp Fresh Cilantro, minced
- 1½ cups Chicken Broth
- ½ cup Golden Raisins
- ½ tsp Cumin
Instructions
- In a saucepan bring chicken broth to a light boil. Stir in couscous. Reduce heat to low and simmer according to package directions, typically 7 – 10 minutes.
- While the couscous is simmering, in a saute pan heat oil on medium heat for 2 – 3 minutes. Add onion and red pepper slices. Saute until onions and peppers are softened.
- Stir in cumin and raisins and continue to saute until onions are translucent.
- Stir cilantro into couscous along with contents of saute pan.
- Serve as a side to your favorite Moroccan, North African, or Middle Eastern dish. Pairs well with our Cornish Hen with a Moroccan Twist recipe.
