Cornish Hen With A Moroccan Twist

Think of it as a mini chicken. Pizza places offer personal pizzas… the meat department has these personal chickens. How awesome is that? Although, they aren’t as widely sold as traditional chickens so they can be a challenge to locate in some grocery stores but almost all should carry them.

Like any chicken, these roast up great. They are also compatible with endless flavor profiles since chicken is such a versatile meat. We love versatility because we love flavor, hence our name.
Today, we are doing a mouthwatering take on the Cornish Hen by giving it a little Moroccan flair. Pair it with our Moroccan Couscous recipe and you have yourself a winning combination. So, let’s get this party started. Our ingredients below will have both the Cornish Hen and the Couscous ingredients since we made them together. However, we will focus the instructional side and ingredients/recipe card on the Cornish Hen itself.
Preparation: Cornish Hen with a Moroccan Twist
First, let’s make our rub. In a prep bowl mix 1.5 tbsp of olive oil, 1 tsp of cumin, 1 tsp of harissa paste, 1/2 tsp of paprika, 1/4 tsp of salt, and 1/4 tsp of pepper. This will be the rub for the hen. Set it aside.
Juice a lemon. Rub the inside and outside of the hen with the lemon juice with your hands or a basting brush. Then, rub both the interior and exterior of the hen with the olive oil and spice mixture. Tip: Coat the outside completely and use what is left on the inside.
Set aside and allow to marinate for at least a half hour.
Preheat the oven to 400 degrees. Place the hen in a roasting dish or pan and place in the oven, cooking for 35 to 40 minutes; or until the juices run clear and outside takes on a golden color.
Allow to rest for a minimum of 5 minutes. Serve with Moroccan couscous. You now have Cornish Game Hen with a Moroccan twist.

Cornish Hen With A Moroccan Twist
Ingredients
- 1 Cornish Hen
- 1 Lemon, juiced
- 3 tbsp Extra Virgin Olive Oil, divided in half
- 1 tsp Ground Cumin
- 1 tsp Spicy Harissa Paste
- 1/2 tsp Paprika
- 1/4 tsp Salt
- 1/4 tsp Fresh Ground Black Pepper
Instructions
- Unwrap Cornish Hen and place on a plate or board. Pat dry.
- In a prep bowl mix half the olive oil, cumin, harissa paste, paprika, salt, and pepper. This will be the rub for the hen. Set aside.
- Rub interior and exterior of hen with lemon juice.
- Rub interior and exterior of hen with rub. Allow to marinate for at least 30 minutes and up to an hour.
- Preheat oven to 400 degrees.
- Place hen In a roasting pan or roasting dish. Cook for 35 to 40 minutes or until juices run clear and hen starts to take on a golden color.
- Allow to rest for 5 minutes and serve.
