So, you’re 1/16th Irish but you cling to that because it’s cool. You love four leaf clovers and Guinness beer; perhaps maybe even a shot of Jameson now and then. Nothing is going to stop you from enjoying all of your favorites on St. Patrick’s Day – because you knew he was the patron saint of Ireland. This type of celebration calls for a feast and nothing will hit the spot like some homemade corned beef and cabbage.
We’ll spare you the full history lesson but, in brief, this dish has been long associated with the 17th of March here in America. The origins are a little murky, after all corned beef and cabbage is not considered an Irish national dish. It seems it was more of an Irish-American fare concocted as a substitute for bacon in the more traditional bacon and cabbage dish.
Nevertheless, do not dismay. We love corned beef and cabbage and we are here to celebrate your most treasured holiday right alongside you. Luckily, this dish is not overly complex so even if you are several Guinesses deep you can likely still create your masterpiece. We recommend getting those ingredients and chopping them down before indulging too much, though!

Now that you’ve prepped your ingredients most of the work is actually done. So, congratulations on that. The slow cooker will do most of the heavy lifting. Place the ingredients in the slow cooker, set it to low, and play your favorite Irish playlist. Today is your day.

After about six hours and St. Patrick-only-knows what else you’ll want to toss in the cabbage. Then let the cooker go back to work (on low). If you like your cabbage a little more done you can place it in the cooker earlier than the six hour mark, this is purely based on preference.
About the 8 hour mark the time has come. You’re probably getting pretty hungry after the smells have wafted through your home for the better part of a day. Plate the dish with meat sliced against the grain to your desired thickness, sprinkle with some parsley for some added color and presentation, then dig in! This hearty dish should enable you to take down a few more libations as the sun sets on another epic St. Patrick’s Day. Slainte!

Corned Beef and Cabbage
Equipment
- Slow Cooker
Ingredients
- 1 Corned Beef Brisket (with pickling spices) About 2.5 lbs.
- 1 Sweet Onion, medium Chopped
- 1 Head of Green Cabbage Roughly Chopped
- 1 lb. Gold Potatoes Chopped. Leave smaller potatoes hole. Uniform in size.
- 2 Stalks of Celery Diced
- 12 oz. Rainbow Baby Carrots Usually 1 package
- 1 tbsp Apple Cider Vinegar
- 1 tsp Allspice
- 2 cups Water
- 1 tbsp Chopped Parsley
- Fresh Ground Black Pepper To taste
Instructions
- Remove corned beef brisket from package, rinse with cold water, and pat dry. Set pickling spices aside.
- In a slow cooker mix water, vinegar, and allspice
- Place meat in the slow cooker fat side up. Add in celery, carrots, potatoes, onions and bay leaves. Sprinkle in pickling spices.
- Cover and cook on low for 6 hours. Remove lid and add cabbage. Cook for another 2 hours on low. Note: If you prefer cabbage more tender you can add earlier.
- Remove meat from cooker and slice against the grain. Plate with vegetables. Spoon some liquid over the top, sprinkle with some parsley and serve.
