Episode 2 in the Flavor Bible Burger Series takes us a little south and a little west. We kicked this series off with a tip of the cap to Ol’ Glory with these Red, White and Blue Burgers. Our hope is to take this journey around the globe – much like the rest of this blog – with some exotic takes on an American favorite. Today, we venture closer to stamping our passport with Chipotle Stuffed Tex-Mex Burgers.
Sporting two kinds of cheese combined with the smoky, spicy delight of chipotle peppers and bookended by mouthwatering grilled Texas Toast, these burgers will make you a star at your next cookout. They say everything is bigger in Texas – well, this fits the mold. You may have to dislocate your jaw to get a full bite! We’re kidding… kinda 😉
So, what do you say we get down to it?
Preparation: Chipotle Stuffed Tex-Mex Burgers
Prepare the Mayo
The first thing you’ll want do is prepare the Chipotle Mayo. It’s very easy to make ahead. We recommend storing it in the refrigerator during the rest of the process as this will allow the flavors to come together and a cool, creamy mayo is the perfect condiment for this beast.
Make the Patties
We wanted big burgers so we took a pound of ground beef and divided it into two half pound patties. You can make smaller versions if you choose, but c’mon, live a little. Simply stuff each patty with a mixture of queso fresco cheese and chipotle peppers. You can do this by creating a pocket with a couple of fingers and folding in the two ingredients. Then form the patty around the stuffing and “pat” into a shape that has as even thickness as possible for more uniform cooking. We shaped our patty like the Texas Toast rather than a traditional circular shape so it would rest better on our “buns”.

Let’s Make Burgers!
Preheat the grill to about 400°F. Place the patties on the grill. If your grill has a top rack, place the Texas toast up there. An optional but recommended step is to throw the thick slices of tomato up there with the Texas Toast. The flavor the grill will add to the tomato is a welcome addition. We also tried two versions, one with grilled red onion and the other with raw red onion. There’s a reason red onion is almost always eaten raw. Cooking the red onion will remove the trait that makes red onion great, the flavorful bite that it brings to the table. It’s always fun to experiment but stick with the raw red onion as it compliments and counters some of the other flavors perfectly.

Cook the patties for 6 minutes on one side and flip. Flip the Texas Toast and tomato slices at this time, too. Cook for an additional 4 minutes. Top the burgers with the pepper jack cheese slices. Cook for 1 – 2 additional minutes and remove.

Assemble the Burgers… and Eat!
To assemble the burgers layer ½ tbsp of chipotle mayo on each slice of grilled Texas Toast. Top with lettuce, tomato, and red onion. Close up the burgers and pair them with your favorite side. French fries or tater tots are always a good choice in our book.

- Form 2 equal patties. Stuff with chipotles and queso fresco.

- Preheat the grill to about 400°F. Place the patties on the grill. If your grill has a top rack, place the Texas toast on.

- Cook patties for 6 minutes on one side and flip. Flip the Texas toast at this time, too. Cook for an additional 4 minutes. Top burgers with cheese slices. Cook for 1 – 2 additional minutes. Remove.

- Assemble burgers. Layer ½ tbsp of chipotle mayo on each slice of grilled Texas toast. Top with lettuce, tomato, and red onion.

- Close up burgers and serve with your favorite burger side.
