We’ve been whipping up some quick dinners lately. We don’t share them all but we always share the good ones. These Grilled Shrimp Skewers with Trader Joe’s Crunchy Jalapeno, Lime, & Onion are just that. And guess what? There’s literally two ingredients. Not everything here is complicated. The beauty of these is twofold – they can be the centerpiece of the world’s quickest and easiest meal (what we did tonight and what is pictured) or they can be used as part of something bigger. We’re thinking these would be great in shrimp tacos or a shrimp pasta. Maybe we’ll come back to these with one of those creations.
A couple of quick notes before we show you just how simple this dish is. One, this condiment is a limited time, seasonal item at Trader Joe’s. No, they aren’t paying us to tell you to run out and pick it up (although we wouldn’t mind that!). We picked this up and, like most things that hang in the pantry for more than a couple of weeks, we waited for the right inspiration and then we made it happen. The second piece to keep in mind is to not get caught up in the marinade (although this product can be used for far more than a marinade). You can season, marinate, or do just about anything with shrimp that you like. If this flavor profile doesn’t excite you take any liberties you like. Maybe this recipe will inspire your own creative ideas.
Ok, end monologue. Let’s get these made in less time than it takes to create this blog post 😀
Preparation: Grilled Shrimp Skewers (with Trader Joe’s Crunchy Jalapeno, Lime & Onion)
Prep is simple. Just two ingredients. Toss them together in a mixing bowl, cover, and refrigerate. We had ours sitting for about 8 hours. We would recommend at least an hour and certainly up to 24 hours would be fine. Also, don’t forget to soak your skewers if you’re using bamboo skewers like we did. These won’t be on the grill long so you can get away with a shorter soak (follow package directions).
Fire up the grill and preheat to medium heat. While the grill preheats, skewer up your shrimp.
Place the skewers on the grill leaving space in between. Grill for 2 – 3 minutes, flip each skewer and grill for another 2 – 3 minutes.
Remove the shrimp from the grill. Serve immediately or incorporate in your recipe of choice.
