If you’ve been around the brunch craze over the past several years you’ve probably come across a Lox bagel on the menu. If you’re from the Pacific Northwest you’ve probably devoured more than you can count. Because it’s in our DNA we like to be a little different. So, we put a Southern twist on this crowd pleaser with our Southern Lox Toast.
The classic Lox bagel is usually some combination of smoked salmon, cream cheese, red onion, and capers – often with a few extras thrown in. When you see how easy this is to make you’ll wonder why you’re just now hearing of this creation. Honestly, we just made it up on a whim so we hope you enjoy it as much as we did.
Preparation: Southern Lox Toast
Toss the bulky bagel and sub in a satisfying piece of toast as the base. Out with the boring cream cheese (well, kind of) and in with our Homemade Pimiento Cheese (it has some cream cheese in it, FYI). The red onions still make the cut. Capers could be added but we left those off because we didn’t think they would add much value in this preparation. Finally, we used a Cajun Smoked Salmon which fit in very nicely to this assembly.
Seriously, that’s it. It’s all in the recipe card below. We recommend making the Pimiento Cheese ahead of time or even the day before. In fact, we made a big batch and this is what we came up with for the extras. This has all the feels of a dish where you can take our recipe as a base and sprinkle in your own additions.

There’s only very basic equipment to make our Southern Lox Toast. First you’ll have to make the pimiento cheese and for that you’ll need a cheese grater, a mixing bowl, and a rubber spatula. Equipment
- Toaster
Ingredients
- Toast, use a thicker, heartier multi-grain bread for best results 1 slice per serving
- PImento Cheese Enough to spread a layer on the toast. Make ahead. See notes.
- Cajun Smoked Salmon Pre-smoked, store bought
- Diced Red Onion To taste
Instructions
- Toast bread in the toaster to desired doneness. Spread a layer of pimento cheese over each slice. Place pieces of Cajun Smoked Salmon over the layer of pimento cheese. Top with diced red onion and serve.
